Chicken in Garlic Sauce Recipe

Chicken in Garlic Sauce is another new dish that I just learned today or this week. I love chicken breasts and I guess a lot of other people love chicken breasts, because it's light and healthy. For those looking after their weight or on diets chicken breasts is good way to go I guess and a long with vegetables I'd say it's a light dish tonight. I'm not so sure what vitamins are in chicken breasts but a lot of athletes and people who want to look good and include celebrities eat chicken breasts as their source of meat. Also chicken breasts is versatile you use is just about any dish you want. 

Chicken in Garlic Sauce Ingredients: 
3 to 4 pcs chicken breasts sliced into 1/2 bite size pieces
3 carrots cut diagonally
1 crown of broccoli use florets
4 cloves of garlic minced
onion sliced
1 green onion chopped optional mushrooms, 
for sauce: 
1/2 cups chicken stock
4T oyster sauce
2T soy sauce
drop of hot sauce
slurry

Chicken in Garlic Sauce Step by Step Cooking Procedure: 

Step 1: Prepare chicken cut chicken breasts into 1/2 inch bite size pieces then put into a container then season with garlic salt if no garlic salt can use garlic powder, then pepper set aside. 

Step 2: Prepare vegetables cut carrots into diagonal shapes, and broccoli cut of florets and blanch in hot boiling water for 1-2 min then drain set aside. 

Step 3: Prepare Wok or big skillet and prepare hot oil when oil is hot cook chicken, cook chicken until brown this should take 6-8 min when chicken is cooked set aside.

Step 4: Wipe of excess oil then heat pan again add a little more oil saute garlic, and onions saute until fragrant then add the green onions and mushrooms. 

Step 5: Add the blanched carrots and broccoli and stir fry for a minute

Step 6: Add chicken and stir fry again after a few minutes add sauce let boil. 

Step 7: When sauce comes to a boil add slurry and stir and simmer for few minutes then serve.

Beef Pochero Recipe

Beef Pochero Ingredients:
Beef sirloin (cubed)
Garlic (crushed)
Onion (diced)
Ginger (diced)
1 pouch tomato sauce
Pechay tagalog or bokchoy
Saba bananas (about 5 pcs. , cut cross-wised)
Sweet potatoes or camote (cubed)
Potatoes (cubed )
Fish sauce and pepper to taste
cooking oil

Beef Pochero Step by Step Cooking Procedures:
Step 1: In a pot, boil beef, reduce heat to simmer until beef is tender.

Step 2: In a pan, sauté ginger, garlic, and onions. Add beef (without the stock) and stir frequently until the beef absorb the flavor of the spices.

Step 3: Add the beef stock and tomato sauce and let it simmer.

Step 4: Add potatoes and sweet potatoes.

Step 5: After 8 minutes add the saba bananas.

Step 6: Season with fish sauce and pepper.

Step 7. After 5 minutes, add the pechay or bokchoy.

Step 8. Serve hot.

Egg Roll Recipe

Egg Roll Ingredients:
6 hard boiled eggs
½ kilo ground pork
½ cup carrots, diced
1/3 cup Chinese celery or kinchay, chopped
1 egg, beaten
Salt and pepper
Flour
Bread crumbs
1 egg, beaten

Egg Roll Step by Step Cooking Procedures:

Step 1: Mix ground pork, carrots, kinchay, and 1 beaten egg, season with salt and pepper.

Step 2: Wrap the hard boiled egg with the meat mixture and form like a ball.

Step 3: Dip egg covered with meat mixture in flour, then dip in beaten egg and roll in breadcrumbs.

Step 4: Deep-fry until cooked through and drain in paper towels.

Chicken Afritada Recipe

I have made Afritada before, but haven't made Chicken Afritada. I made it a little bit spicy by adding some hot sauce. You may use other chicken parts but I have chosen to use chicken breasts because I love chicken breasts and I want more meat. And that I think chicken breasts is healthier there are people eating more chicken breasts now a days because it is lean and healthy. And this dish is healthy because it has lycopine with the tomato sauce and the vegetables.

Chicken Afritada is another one of those tomato based dishes that's yummy and nutricious try and make some today.

Chicken Afritada Ingredients: 
chicken parts
1 medium onion diced
4 cloves garlic minced
potatoes peeled and sliced
carrot peeled and sliced
green and red bell peppers sliced
2-3 bay leaves
chicken stock
green peas
salt
sugar
pepper

Chicken Afritada Step by Step Cooking Procedure: 
Step 1:Prepare chicken cut chicken into bite size pieces then season with salt and pepper. 

Step 2: heat pan with oil when oil is hot cook chicken until chicken is lightly brown then set aside.

Step 3: In the same pan saute garlic and onions until fragrant then readd chicken and cook for few minutes. 

Step 4: add tomato sauce and chicken stock and bay leaves and simmer for few minutes.

Step 5: Add carrots and potatoes simmer for few minutes more add in bell peppers and green peas season with green peas. 

Step 6: Season with salt, sugar and black pepper for spiciness add hot sauce. 

Pineapple Chicken with Mushrooms Recipe

Pineapple Chicken with Mushrooms- this is another one of my experimental dishes which I think came out ok which I will do, the recipe calls for chicken thigh fillets but I like more chicken breasts. The sauce is like a sweet and sour but I did it differently. 

Pineapple Chicken with Mushrooms Ingredients:
6 chicken breasts sliced into pieces
chopped onions
chopped garlic
1 red bell pepper sliced 
1 green bell pepper sliced
1 can mushrooms
1 can pineapple tidbits reserve ppineapple juice for sauce 
1 cup vinegar, mix together with the reserved pineapple juice from the pineapple tidbits, 
3 chillies
1Tbsp sugar. 

Pineapple Chicken with Mushrooms Step by Step Cooking Procedures: 
Step 1: In a pot bring to a boil the 1 cup of vinegar mixed with the pineapple juice and the chillies bring to a boil then stir i in the 1Tbsp sugar simmer for few minutes set aside. 

Step 2: In pan melt butter then season chicken pieces with salt and pepper then cook chicken until brown when chicken is brown set aside.

Step 3: In same pan saute all vegetables until fragrant then return chicken pieces mix everything together then add pineapples then drizzle in sauce bring to a boil add slurry stir and simmer for few minutes. 

Step 4: transfer to serving dish then serve.

Sinampalukang Manok (Chicken and Tamarind Soup) Recipe

Sinampalukang Manok is flavorful soup, which had a sour broth. It is made of Chicken cooked with tamarind leaves sprouts and vegetables

Sinampalukang Manok Ingredients:
1 to 1 1/2 lb chicken, sliced into serving pieces
2 cups fresh spinach
3 medium tomatoes, quartered
2 tablespoons fish sauce
1 1/2 cups tamarind leaves
1/2 lb long green beans (or string beans)
1 medium Chinese eggplant sliced
1 medium onion, sliced
1 tablespoon sinigang mix (optional)
1 chicken bouillon
3 tablespoons cooking oil
3 to 4 cups water

Sinampalukang Manok Step by Step Cooking Procedures:

Step 1. Heat oil in a cooking pot.

Step 2. Saute onion and tomatoes.

Step 3. When the onions and tomatoes becomes soft, add the chicken and then cook until the color of the outer part turns light brown.

Step 4. Pour-in the fish sauce, and then add chicken bouillon. Stir.

Step 5. Pour-in water and let boil.

Step 6. Add tamarind leaves and sinigang mix powder. Simmer until chicken becomes tender.

Step 7. Add the eggplant and long green beans. Cook for 5 to 8 minutes.

Step 8. Put-in the spinach and cover the cooking pot. Let the cover stay for 5 to 6 minutes for the residual heat to cook the spinach.

Step 9. Transfer to a serving bowl. Serve.

Beef Mechado Recipe

Beef Mechado is a type of stew with tomato sauce. This dish is somewhat similar to other Filipino dishes such as the Kaldereta , Estofada , and as well as the Afritada because of the base ingredient used (which is tomato sauce).

Estimated Cooking Time:1 hour

Beef Mechado Ingredients:
1 1/2 kilos kilo beef (strip of fat inserted) or kabilugan
4 calamansi (Squeeze the juice and set aside)
5 Tablespoons soy sauce
1 large onion, sliced
5 cloves garlic, crushed
4 tablespoons sherry
1 1/2 cups water
1 teaspoon peppercorns
1 small bay leaf
3 tablespoons all purpose flour (toasted)

2 tablespoons butter
2 potatoes, quartered
2 tomatoes cubed (optional)
1/4 cup tomato sauce (optional)
Salt
Olive Oil

Beef Mechado Step by Step Cooking Procedures:

Step 1. Marinate the beef in calamansi juice and soy sauce. Keep overnight with the marinade still intact.

Step 2. The following day, brown the beef in olive oil. Add diced tomatoes until tomatoes are tender.

Step 3. Add bay leaf, onion, garlic, sherry, water, salt, peppercorns. Simmer until tender. (I usually use pressure cooker)

Step 4. Remove the meat from the pan.

Step 5. Slice beef and strain the sauce.

Step 6. Thicken the sauce with tomato sauce, toasted flour and butter.

Step 7. Add back the beef to the sauce and add potatoes.

Step 8. Simmer until tender.

Step 9: Serve hot with white rice

Beef Mechado Cooking Tips:
  • Pressure cook the beef with the beef stock for faster cooking time.
  • Fry the potatoes before adding to the casserole.
  • Add 2 to 3 tablespoons of olive oil and stir when the mechado dish is almost done for added flavor.
